A seasonal menu has been devised by Belgian-born Pascal Lorange, the former personal chef to singer Julio Iglesias. After working across southern Europe, he now treats patrons in Chicago to maritime delights in the Mediterranean vein, such as salmon crudo or chargrilled octopus.
